Batata Nu Bharthu
We have often prepared traditional Gujarati batata nu shaak but today we will make something different using potatoes. We will prepare Bataka Nu Bharthu, this tasty batata nu shaak is prepared by roasting the potatoes which gives a nice burnt taste to the recipe. With a nice tadka of mustard seeds, jeera, kadi patta and hing this recipe is very quick to make. To give it a more rustic taste, I have added a coarse paste of green chilies, garlic and peanuts. Ingredients:

For Garlic-Green Chilli-Roasted Peanut Paste:

  • 10-12 Green Chilies (Hari Mirch)
  • 7-8 Garlic Cloves (Lehsun)
  • Some Roasted Peanuts (Singdana)

For Sabzi:

  • 4-5 Boiled & Peeled Potatoes
  • 2 Finely Chopped Onions
  • 8-10 Curry Leaves (Kadi Patta)
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1/4 Asafoetida (Hing)
  • Coriander Leaves (Dhania)
  • Oil

Procedure:

  1. Roast boiled & peeled potatoes on gas stove by using a steel net. Roast it well from all sides till it blackens.
  2. Heat some oil in kadhai, use an iron kadhai if possible. Add mustard seeds, cumin seeds, asafoetida and curry leaves.
  3. Add finely chopped onions and stir till it turns golden brown.
  4. Add garlic-green chilli-roasted peanut paste and stir well.
  5. Mash the potatoes in it. Add some salt and mix well. Cook for 2-3 minutes without covering it.
  6. Garnish it with some coriander leaves and batata nu bharthu a tasty Gujarati batata nu shaak is ready.
