Dhekra is a traditional Gujarati recipe which is prepared using lili tuver or pigeon peas. This recipe is a fantastic Gujarati recipe to enjoy with your friends and family. Ingredients:
- 1 Cup Lilva Tuver
- 1/2 Cup Finely Chopped Green Garlic (Hara Lehsun)
- 1/2 Cup Finely Chopped Coriander Leaves (Dhania)
- 2 Cups of Rice Flour (Chawal ka Atta)
- 1/2 Cup Jowar Flour
- 1/2 Cup Coarse Wheat Flour (Gehun ka Karkara Atta)
- 3-4 Teaspoons of Green Chilli-Ginger (Hara Lehsun-Adrak) Paste
- 2-3 Teaspoons Sesame Seeds (Til)
- 1/2 Teaspoon Turmeric Powder (Haldi)
- 1/4 Teaspoon Asafoetida (Hing)
- 1-2 Teaspoons of Jaggery (Gud)
- Juice of 1 Lemon
- Salt
- Water
- Oil
Procedure:
- Boil lilva tuver in pressure cooker with some salt. Pressure cook for 2-3 whistles.
- Boil 2 cups of water.
- After it boils add turmeric powder, asafoetida, sesame seeds and jaggery. Melt the jaggery well on low gas.
- Add finely chopped green garlic, finely chopped coriander leaves, green chilli-ginger paste, boiled lilva tuver and stir well.
- Add salt, lemon juice and around 1-2 teaspoons of oil. Mix well.
- Add rice flour and jowar flour. Stir well on low gas.
- Add coarse wheat flour and mix well. Close lid and cook for 2-3 minutes.
- Let the mixture cool down. Apply some oil on your palms and knead the mixture into a smooth dough.
- Take some portion and prepare small balls out of it and flatten it to make the dhekras.
- Deep fry the dhekras on medium gas and make them nice golden brown. Tasty and traditional Gujarati Dhekras are ready.
