Rajwadi Khichdi
Khichdi is a popular Gujarati recipe which is healthy and even tasty. Gujarati Khichdi is a full meal recipe consisting of rice, dal and vegetables cooked in masalas. Khichdi can be prepared in various ways. Today we will make Rajwadi Khichdi recipe. We have added whole dried spices in it to give it a nice spice and have given the Khichdi a double tadka which gives an amazing taste to the Khichdi. Addition of cashew nuts and raisins gives a Rajwadi taste to the Khichdi.
 

Recipe: 

Ingredients:

  • 1.5 Cup of Rice
  • 1.5 Cup of Mix Dal (Moong Dal, Chana Dal, Masoor Dal, Green Moong Dal)
  • 2 Diced Potatoes
  • ½ Cup Green Peas (Matar)
  • 1 Diced Carrot (Gajar)
  • 1-1.5 Teaspoon Ginger-Garlic (Adrak-Lehsun) Paste
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • 2 Bay Leaves (Tej Patta)
  • 2 Dried Red Chilies (Sukhi Lal Mirch)
  • 2 Black Cardamom (Badi Elaichi)
  • 2-3 Cinnamon Sticks (Dalchini)
  • 4-5 Cloves (Laung)
  • 5-6 Black Peppercorns (Sabut Kali Mirch)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
  • Oil
  • Water

For Tadka:

  • ½ Cup Finely Chopped Green Garlic (Hara Lehsun)
  • ½ Cup Finely Chopped Spring Onions
  • 1 Finely Chopped Tomato
  • ½ Teaspoon Turmeric Powder (Haldi)
  • ½ Teaspoon Red Chili (Lal Mirch) Powder
  • ¾ Teaspoon Garam Masala
  • 10-12 Raisins (Kishmish)
  • 10-12 Cashew Nuts (Kaju)
  • 4-5 Teaspoons of Ghee 

Procedure:

  1. Soak rice and mix dal for 15-20 minutes.
  2. Heat some oil in pressure cooker and add mustard seeds, cumin seeds, asafoetida, bay leaves, dried red chilies, black cardamom, cinnamon sticks, cloves and black peppercorns. Sauté it for 2-3 minutes.
  3. Add diced potatoes, green peas and diced carrots. Stir well.
  4. Add ginger garlic paste and sauté it.
  5. Add turmeric powder, dhana jeera powder, red chili powder and mix well.
  6. Add soaked rice and mix dal.
  7. Add water as per requirement. You would require almost 6 cups of water for above measurements. Add salt as per taste. Mix well. Close lid and pressure cook for 2 whistles.
  8. For tadka heat ghee and sauté green garlic and spring onions.
  9. Add finely chopped tomato and some salt to cook the tomatoes fast. Stir well.
  10. Add turmeric powder, red chili powder, garam masala, raisins and cashew nuts. Stir well.
  11. Once the khichdi is ready, release the pressure and open the pressure cooker.
  12. Add the prepared tadka and mix well. Rajwadi Khichdi is ready.
