Panki is a traditional Gujarati recipe which is prepared using banana leaves. A batter consisting of rice flour and spices is spread between two banana leaves and is then cooked on a tawa. This is a very healthy and light food to have. The recipe is very simple and easy to prepare.

- 1.5 Cups of Rice Flour
- 1-1.5 Teaspoon Green Chili-Ginger (Hari Mirch- Adrak) Paste
- 3-4 Teaspoon Curd (Dahi)
- ¾ Teaspoon Turmeric Powder (Hali)
- ¾ Teaspoon Crushed Cumin Seeds (Jeera)
- ¼ Teaspoon Asafoetida (Hing)
- 2 Tablespoons Oil
- Coriander Leaves (Dhania)
- Salt
- Water
- In rice flour add turmeric powder, asafoetida, green chili-ginger paste, crushed cumin seeds, oil, salt, coriander leaves and curd. Mix well.
- Add water and prepare a smooth batter. Let it rest for 30 minutes.
- Now cut banana leaves into small square pieces and apply oil to one side of the leaves.
- Heat a tawa well on low flame and place a piece of banana leaf with the side with oil facing top. Spread the batter on the leaf and place another leaf over it. Let the Panki cook well.
- Cook it from both side and our Panki is ready. Serve it with green chutney.
