Ingredients:
For Garlic Chutney:
- 12-15 Garlic Cloves (Lehsun)
- 1/2 Teaspoon Cumin Seeds (Jeera)
- 1-1.5 Teaspoon Dhana Jeera Powder
- 1-1.5 Teaspoon Red Chilli (Lal Mirch) Powder
- Salt
- 500 Grams Okra (Bhindi)
- 2 Cups of Buttermilk (Chaas)
- 1-2 Tablespoons Roasted Gram Flour (Besan)
- 1 Finely Chopped Onion
- 1-2 Slitted Green Chillies (Hari Mirch)
- 1 Teaspoon Cumin Seeds (Jeera)
- 1/2 Teaspoon Asafoetida (Hing)
- 1/2 Teaspoon Turmeric Powder (Haldi)
- 1-1.5 Teaspoon Red Chilli (Lal Mirch) Powder
- 1/2 Teaspoon Garam Masala
- 1 Teaspoon Kasuri Methi
- Coriander Leaves (Dhania)
- Salt
- Oil
- Make a garlic chutney by crushing garlic cloves, cumin seeds, dhana jeera powder, red chilli powder and salt.
- Cut bhindis into medium pieces.
- Heat some oil in a kadhai and shallow fry the bhindis. Fry till it becomes semi-cooked.
- Heat some oil for gravy and add cumin seeds and asafoetida. Stir well.
- Add finely chopped onion and stir till it turns transparent.
- Add slitted green chilies.
- Add previously prepared garlic chutney around 1-2 teaspoons and stir well.
- Add roasted gram flour, turmeric powder, red chilli powder and mix well.
- Add buttermilk and stir on low gas. Add salt as per taste.
- Add the shallow fried bhindis after it starts to boil.
- Add garam masala and kasuri methi. Mix well.
- Garnish it with coriander leaves. Bhinda Nu Shaak is ready.
