Kapuriya
Kapuriya is a traditional Gujarati snack recipe which is prepared using very less oil. Kapuriyas are prepared using a special flour consisting of rice, chana dal, tur dal and urad dal. With some basic spices a dough is prepared and small portions of this dough is steamed. If you wish to make this traditional Gujarati recipe more tasty you can top it with peanut oil and achaar masala. Alternatively you can also prepare a tadka and pour it over your kapuriyas. This Kapuriya recipe in Gujarati is a visarati vangi. So do try out and enjoy the taste of Gujarat.
Recipe:
Ingredients:

  • 1 Cup Rice
  • 1/2 Cup Chana Dal
  • 1/4 Cup Tur Dal
  • 1 Tablespoon Urad Dal
  • 1.5 Cups of Water
  • 1/2 Cup Green Peas (Matar)
  • 1-1.5 Teaspoon Green Chilli-Ginger (Hari Mirch-Adrak) Paste
  • 1 Teaspoon Peanut (Singdana) Powder
  • 8-10 Curry Leaves (Kadi Patta)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1/2 Teaspoon Carom Seeds (Ajwain)
  • 1 Teaspoon Sesame Seeds (Safed Til)
  • 1/4 Teaspoon Asafoetida (Hing)
  • 1/2 Teaspoon Turmeric Powder (Haldi)
  • Oil
  • Salt
Procedure:
  1. In a mixer make a coarse flour of rice, chana dal, tur dal and urad dal.
  2. Heat some oil in a kadhai and add cumin seeds, carom seeds, sesame seeds, asafoetida and curry leaves.
  3. Add green chilli-ginger paste, peanut powder and turmeric powder. Stir well.
  4. Add 1.5 cups of water for 1 cup of flour. Add green peas. Let the water boil.
  5. Once it comes to a boil add curd and stir continuously. Add salt as per taste and little oil. Mix well.
  6. Add flour and stir it using a rolling pin. Keep the flame low while stirring it. It will thicken and the dough for kapuriya will be ready. Let it cool for 5 minutes.
  7. Apply some oil to your palms and take a small portion of the dough roll it into a sphere. Flatten it slightly and make a small cavity in the centre.
  8. Boil some water in a deep bottomed utensil. Place a hole sieve over it. Grease the hole sieve with oil. Place the kapuriyas on the hole sieve and cover it. Steam it for 12-15 minutes. Keep the flame medium.
  9. Serve the kapuriyas in a plate and top it with peanut oil and achaar masala. Gujarati recipe kapuriyas is ready.
