Kaju Gathiya Nu Shaak

Recipe: Ingredients:
  • ¾ Cup Cashew Nuts (Kaju)
  • ¾ Cup Gathiya
  • 2 Finely Chopped Onions
  • ¾ Cup Tomato Puree
  • 1.5-2 Teaspoon Ginger-Garlic (Adrak-Lehsun) Paste
  • 2 Dried Red Chilies (Sukhi Lal Mirch)
  • 2 Bay Leaves (Tej Patta)
  • 5-6 Black Peppercorns (Sabut Kali Mirch)
  • 4-5 Cloves (Laung)
  • 2 Cinnamon Sticks (Dalchini)
  • 1 Star Anise (Chakri Phool)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ¼ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1.5-2 Teaspoon Kashmiri Red Chili (Lal Mirch) Powder
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1 Teaspoon Garam Masala
  • Coriander Leaves
  • Salt
  • Water
  • Ghee
Procedure:
  1. Shallow fry cashew nuts in ghee. Remove them in a bowl.
  2. Now take some ghee in the same kadhai and add cumin seeds, asafoetida, bay leaves, dried red chilies, cloves, black peppercorns, cinnamon sticks and star anise. Sauté it well.
  3. Add finely chopped onions and stir till it turns golden brown.
  4. Add ginger-garlic paste and mix well.
  5. Add tomato puree and mix well.
  6. Add turmeric powder, Kashmiri red chili powder, dhana jeera powder and garam masala. Mix the masalas well.
  7. Add some water and stir well to prepare the gravy. Add salt and mix well.
  8. Let it come to a boil then add cashew nuts and gathiyas. Stir well and garnish it with coriander leaves. Kaju Gathiya Nu Shaak is ready.
