Tuvar Ringan Nu Shaak or Tuvar Ki Sabji is a popular Gujarati recipe consisting of tuvar (pigeon peas) and eggplant cooked in simple and traditional Gujarati masalas. To give a tangy taste we have also added tomato which makes the recipe full of fresh and healthy vegetables.   • 300 Grams Pigeon Peas ( Tuvar)
  • 250 Grams Diced Eggplant
  • 1 Chopped Tomato
  • 2 Teaspoon Green Chilli – Garlic Paste
  • 1 Teaspoon Mustard Seeds
  • Pinch of Asafoetida (hing)
  • ½ Teaspoon Turmeric Powder
  • 2 Teaspoon Red Chilli Powder
  • 1 ½ Teaspoon Dhana Jeera Powder
  • Salt
  • Water
  • Oil
Procedure:
  1. Heat Oil and add mustard seeds and asafoetida.
  2. Add pigeon peas and mix well.
  3. Close lid and cook for 3-5 minutes.
  4. Add the eggplant and cook well.
  5. Now add turmeric powder, red chilli powder and dhana jeera powder.
  6. Add green chilli –garlic paste.
  7. Add salt as per taste and cook for another 5-7 minutes.
  8. Add chopped tomato and mix well.
  9. Add water as per requirement and cook till the mixture boils.
  10. Add some coriander leaves and mix well.
  11. 11. Tuvar Ringan Nu Shaak is ready.
