Ringan Nu Bhartu | Baingan Bharta Recipe | Gujarati Rasoi

Ringan Nu Bharthu is a popular Indian recipe which is prepared with a roasted eggplant. The eggplant roasted on a flame and is mashed well. This eggplant mash is then cooked with onions, tomatoes, some aromatic spices and the traditional Indian masala. Baingan Bharata is a popular delicacy that is enjoyed all over India is prepared differently in different cultures. Kathyawadi Ringan Nu Bhartu is a well known variety of Roasted Eggplant Mash which prepared predominantly in the state of Gujarat where it is also called as Ringan Nu Oolu. We have tried to imitate the earthy and roasted flavours of Kathyawadi Ringan Nu Bhartu and have delivered to you a recipe that you must try at you home. Recipe: Ingredients –
  • Eggplant
  • 4 Chopped Onions
  • 2 Chopped Tomatoes
  • 2-3 Crushed Green Chillies
  • 2 Teaspoon Ginger-Garlic Paste
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Cumin Seeds
  • ½ Teaspoon of Asafoetida
  • ½ Teaspoon Turmeric Powder
  • 2 Teaspoon Red Chilli Powder
  • 2 Teaspoon Coriander Seed-Cumin Seed Powder
  • Oil
Method –
  1. Take approximately 500 gram weighing eggplant and make criss-cross cuts to check whether the eggplant is fresh or not.
  2. Apply oil to the eggplant.
  3. Roast this eggplant on a gas stove flame from all sides.
  4. Let it cool and then remove the burnt skin of the eggplant.
  5. Remove the stem of the eggplant and then mash the remaining portion well.
  6. Heat oil and add mustard seeds, cumin seeds, asafoetida and chopped onions.
  7. Stir the onions till they turn golden brown.
  8. Now add crushed green chillies, ginger-garlic paste and mix well.
  9. Add chopped tomatoes and let the tomatoes cook for a while.
  10. Add turmeric powder, red chilli powder and coriander seed-cumin seed powder (dhana jeera).
  11. Add the mashed eggplant and salt as per taste. Mix well.
  12. Cook for 3-5 minutes and then add some fresh coriander leaves.
  13. Baingan Bharta or Roasted Eggplant Mash is ready.
