Khaman Dhokla is a the most popular Gujarati recipe which is known all over the world. Recipe: Ingredients –
  • 1 Cup Gram Flour
  • 1 Tablespoon Semolina
  • 1 ½ Teaspoon Ginger-Green Chilli Paste
  • ½ Teaspoon Turmeric Powder
  • ¼ Teaspoon Baking Soda
  • 2 Teaspoon Sugar
  • 1 Teaspoon Mustard Seeds
  • ¼ Teaspoon Hing
  • 5-7 Split Green Chillies
  • 10-12 Curry Leaves
  • 1 Teaspoon Oil
  • 1 Packet Eno
  • Salt
Method – 
  1. Strain the gram flour to avoid any lumps.
  2. Now add semolina, ginger-green chilli paste, turmeric powder, baking soda, sugar and salt. 
  3. Add ½- ¾ cup water and mix well to have a thick consistency. 
  4. Add oil and whisk well.
  5. Now grease a vessel to steam the dhokla.
  6. Now in the mixture add a packet of Eno and add some water and whisk fast so that the mixture increase and becomes almost double.
  7. Now pour this mixture in the vessel.
  8. Put this vessel to steam in a cooker without whistle for 15-20 minutes.
  9. After the dhokla is cooked take it out of the vessel and cut it into square pieces. 
  10. Now heat some oil for tempering and add mustard seeds, hing, curry leaves and green chillies.
  11. Pour this tempering over the Dhokla pieces and Khaman Dhokla is ready to eat.
