Recipe:
Ingredients:

For Frying Cauliflower:
  • 500 Grams Diced Cauliflower (Phool Gobi)
  • 1/2 Teaspoon Turmeric Powder (Haldi)
  • Salt
  • Oil
For Paste:
  • 1-2 Diced Onion
  • 1-2 Diced Tomatoes
  • 3-4 Dried Red Chilies (Sukhi Lal Mirch)
  • 2-3 Green Chilies (Hari Mirch)
  • 1-1.5 Inch Ginger (Adrak)
  • 8-10 Garlic Cloves (Lehsun)
  • Some Cashew Nuts
  • Salt
  • Oil
For Shaak:
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1-2 Bay Leaves (Tej Patta)
  • 1-2 Cinnamon Sticks (Dalchini)
  • 4-5 Cloves (Laung)
  • 4-5 Black Peppercorns (Sabut Kali Mirch)
  • 1 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Red Chilli (Lal Mirch) Powder
  • 1 Teaspoon Garam Masala
  • 1 Teaspoon Kasuri Methi
  • 1/4 Teaspoon Asafoetida (Hing)
  • Salt
  • Hot Water
  • Oil
Procedure:
  1. Take some oil in kadhai and shallow fry the cauliflower. Add turmeric powder and salt while frying it. Fry for 3-5 minutes.
  2. Now take some oil and add diced onions. Make them nice golden brown. Add dried red chilies, ginger, green chilli and garlic cloves. Stir it well. Add diced tomatoes and stir for 2-3 minutes. Let it cool down and make a paste.
  3. Heat some oil and cumin seeds, bay leaves, cinnamon sticks, cloves and black peppercorns. Sauté it well. Also add asafoetida and stir well.
  4. Now add the prepared paste and fry it well. Fry till oil separates.
  5. Add dhana jeera powder, red chilli powder and mix it.
  6. Add shallow fried cauliflower and stir well in the masala. Add little salt as we have added while shallow frying the cauliflower. Close lid and cook for 2 minutes.
  7. Add hot water for the gravy. Close lid and cook for 3-5 minutes.
  8. Add garam masala and kasuri methi. Stir it and close lid, cook for 2 minutes. Flower Nu Shaak is ready.
