Ghes is a very traditional and healthy Gujarati recipe prepared from
broken rice. This recipe is usually prepared during Shitala Satam. This
recipe is light to digest and can be prepared for dinner. This recipe is
prepared in ghee to make it more tasty. This is one of the visarati
Gujarati vangi of the rich Gujarati cuisine. Do try out this simple but
amazing Gujarati recipe.
Ingredients:
- 1 Cup Broken Rice (Kanki)
- 3 Cups of Buttermilk (Chaas)
- 1 Teaspoon Green Chilli-Ginger (Hari Mirch-Adrak) Paste
- 1 Teaspoon Cumin Seeds (Jeera)
- 8-10 Curry Leaves (Kadi Patta)
- Coriander Leaves (Dhania)
- Ghee
- Salt
- Water
Procedure:
- Wash broken rice. Add water to it and soak for 10-15 minutes.
- Drain the water and then add buttermilk and salt.
- In pressure cooker add ghee. Heat it and add cumin seeds, curry leaves and green chilli-ginger paste. Sauté it.
- Add broken rice-buttermilk mixture and stir it.
- Close lid and pressure cook for 3-4 whistles.
- To serve top it with ghee and coriander leaves. Ghes is ready, a traditional Gujarati visarati vangi.
