- 1 Cup Vadi
- 2 Finely Chopped Onions
- 2 Finely Chopped Tomatoes
- 2-3 Finely Chopped Green Chilies (Hari Mirch)
- 8-10 Curry Leaves (Kadi Patta)
- 2 Bay Leaves (Tej Patta)
- 2 Dried Red Chillies (Sukhi Lal Mirch)
- 4-5 Cloves (Laung)
- 4-5 Black Peppercorns (Sabut Kali Mirch)
- 2-3 Cinnamon Sticks (Dalchini)
- 1/2 Teaspoon Turmeric Powder (Haldi)
- 1-1.5 Teaspoon Dhana Jeera Powder
- 1/2 Teaspoon Red Chilli (Lal Mirch) Powder
- 1/2 Teaspoon Garam Masala
- Coriander Leaves (Dhania)
- Salt
- Oil
- Water
- 8-10 Garlic Cloves (Lehsun)
- 1-1.5 Inch of Ginger (Adrak)
- 1 Teaspoon Red Chilli (Lal Mirch) Powder

- In a pressure cooker take some water. Place a utensil in it. Add vadi and pour water to boil the vadi in the utensil. Close lid and pressure cook for 2-3 whistles.
- In a mixer cup take garlic cloves, ginger, red chilli powder and coriander leaves. Grind it into a paste.
- Heat some oil and add bay leaves, dried red chilies, cloves, black peppercorns and cinnamon sticks. Add finely chopped onion. Stir till onions turn golden brown.
- Add curry leaves and green chilies. Sauté it well.
- Add finely chopped tomatoes and cook well.
- Add turmeric powder, dhana jeera powder and red chilli powder. Add the prepared masala and mix well. Close lid and cook for 2-3 minutes.
- Add boiled vadas along with the water used to boil it. Add more water if required. Add garam masala, salt and coriander leaves. Mix well. Vadi Nu Shaak is ready.
