Ingredients:
- 1 Cup Green Peas (Matar)
- ½ Cup Finely Chopped Green Garlic (Hara Lehsun)
- ½ Cup Finely Chopped Coriander Leaves (Dhania)
- 1 Cup Rice Flour (Chawal ka Atta)
- ½ Cup Jowar Flour
- 1-2 Teaspoons of Wheat Flour (Gehun ka Atta)
- 8-10 Green Chilies (Hari Mirch)
- 1-1.5 Inch Ginger (Adrak)
- ½ Teaspoon Turmeric Powder (Haldi)
- ¼ Teaspoon Asafoetida (Hing)
- 2-3 Teaspoon Sesame Seeds (Safed Til)
- 1 Teaspoon Jaggery (Gud)
- Juice of ½ Lemon
- 2 Cups of Water
- Oil
- Salt
Procedure:
- Coarsely grind green peas, green chilies and ginger.
- Heat 2 cups of water. After it heats well add turmeric powder, asafoetida and sesame seeds. Stir well. Add the green peas mixture, green garlic and coriander leaves. Stir well.
- Add salt, lemon juice and jaggery. Mix well.
- Add rice flour and mix it well. Add jowar flour and wheat flour. Mix it. The mixture will thicken as you mix it. If it doesn’t get the right consistency to knead, add little more jowar flour or wheat flour. Keep the gas low while doing this process.
- Add 1-2 teaspoons of oil and mix well.
- On gas stove place a tawa. On the tawa place the kadhai and close it. Cook for 10 minutes. In between stir the mixture.
- After 10 minutes let it cool down. After it cools knead it well. Apply oil while kneading the dough. Take small portions of the mixture and prepare vadas.
- Deep fry the vadas in oil. Make them nice crispy and golden brown. Keep the gas flame medium to cook them properly. Lila Vatana Vada is ready.
