Ingredients:

For Achari Masala:
  • 1 Teaspoon Mustard Seeds (Rai)
  • 2 Teaspoon Cumin Seeds (Jeera)
  • 4-5 Dried Red Chilies (Sukhi Lal Mirch)
  • 2 Teaspoon Coriander Seeds (Sabut Dhania)
  • 1 Teaspoon Fenugreek Seeds (Methi Daana)
  • 1.5 Teaspoon Kalonji
  • 1.5 Teaspoon Fennel Seeds (Saunf)
For Sabji:
  • 3-4 Potatoes
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1 Teaspoon Red Chili (Lal Mirch) Powder
  • 1 Teaspoon Amchur Powder
  • Salt
  • Oil
Procedure:
  1. Roast mustard seeds, cumin seeds, coriander seeds, fenugreek seeds, kalonji, fennel seeds and dried red chilies. Let it cool and grind it coarsely.
  2. Heat some oil and add about 2 teaspoons of achari masala and sauté it.
  3. Add potato wedges and stir well. Make it nice crispy and golden brown. Close lid and cook for 2-3 minutes.
  4. Now add turmeric powder, red chili powder, amchur powder, some achari masala and salt. Mix well. Achari Aloo is ready.
