  • 250 Grams of Tinde (Tindora)
  • 1 Finely Chopped Onion
  • Puree of 2 Tomatoes
  • 1.5-2 Teaspoon Ginger-Garlic (Adrak-Lehsun) Paste
  • 2-3 Teaspoons of Roasted Peanut (Singdana) Powder
  • 2-3 Lengthwise Chopped Green Chilies (Hari Mirch)
  • 2 Bay Leaves (Tej Patta)
  • 2 Cinnamon Sticks (Dalchini)
  • 5-6 Black Peppercorns (Sabut Kali Mirch)
  • 5-6 Cloves (Laung)
  • 1 Teaspoon of Cumin Seeds (Jeera)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
  • 1 Teaspoon Kasuri Methi
  • 1 Teaspoon Garam Masala
  • Coriander Leaves (Dhania)
  • Salt
  • Water
  • Oil


  1. In a bowl take tindora and cut it from top and bottom and make a criss cross cut.
  2. Heat some oil and shallow fry the tindora.
  3. Now for gravy heat some oil and add cumin seeds, bay leaves, cinnamon sticks, black peppercorns and cloves. Stir it.
  4. Add finely chopped onions and make it golden brown.
  5. Add ginger garlic paste, sauté it well.
  6. Add tomato puree and cook it well.
  7. Add turmeric powder, dhana jeera powder, red chili powder and salt. Mix well.
  8. Add roasted peanut powder, lengthwise chopped green chili and Kasuri methi. Mix well.
  9. Add water and let it boil for 2 minutes.
  10. Add tindora and mix well. Close lid and cook for 5-7 minutes.
  11. Add garam masala and coriander leaves. Tindora Nu Shaak is ready.
