Ingredients:
For Special Masala:

  • 5 Black Cardamom (Black Elaichi)
  • 5-6 Cardamom (Elaichi)
  • 2-3 Cinnamon Sticks (Dalchini)
  • 5-6 Cloves (Laung)
  • 7-8 Peppercorns (Sabut Kali Mirch)

For Boiling Choli:

  • 150 Grams of Choli
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-2 Teaspoons of Oil
  • Salt

For Gravy:

  • 2 Crushed Tomatoes
  • Puree of 2 Tomatoes
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ¾ Teaspoon Carom Seeds (Ajwain)
  • ½ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1 Teaspoon Red Chili (Lal Mirch) Powder
  • ¾ Teaspoon Fennel Seeds (Saunf) Powder
  • ¾ Teaspoon Chaat Masala
  • 1 Teaspoon Garam Masala
  • Coriander Leaves (Dhania)
  • Salt
  • Oil

Procedure:

  1. Wash choli well and soak it for 4-5 hours.
  2. In a mixer make a coarse powder of black cardamom, cardamom, cinnamon sticks, cloves and black peppercorns. This is our special masala.
  3. In a pressure cooker add the choli, turmeric powder and salt. Add water and pressure cook for 2 whistles.
  4. In a kadhai heat some oil and add cumin seeds, carom seeds, asafoetida and the prepared masala. Stir well.
  5. Add crushed tomatoes and tomato puree. Sauté it well. Close lid and cook for 2-3 minutes.
  6. Add turmeric powder, dhana jeera powder, red chili powder, fennel seeds powder and chaat masala. Stir well.
  7. Add coriander leaves, garam masala and salt. Mix well.
  8. Add boiled choli and mix.
  9. Mash the choli little bit to make the gravy thick. 10. Garnish it with coriander leaves and our Choli Nu Shaak is ready.
