Ponk Vada is a famous recipe of Surat. Surti Ponk Vada recipe is loved by everyone in Gujarat especially in the winter season. This Gujarati Vada recipe is prepared using fresh ponk, chana dal and some simple masalas.   • 500 Grams of Ponk
  • 1-1.5 Cups of Soaked Chana Dal (Soak for 3-4 hours)
  • 1 Finely Chopped Onion
  • ½ Cup Finely Chopped Green Garlic (Hara Lehsun)
  • 1-1.5 Teaspoon Ginger-Green Chili (Adrak-Lehsun) Paste
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
  • ½ Teaspoon Asafoetida (Hing)
  • Juice of 1 Lemon
  • Finely Chopped Coriander Leaves (Dhania)
  • 1 Teaspoon Sugar
  • Salt
  • Oil


  1. Keep some ponk aside and grind rest of it coarsely.
  2. Grind the soaked chana dal coarsely. Don’t add water while grinding it.
  3. In a mixing bowl add grinded chana dal, grinded ponk, add the whole ponk that we had kept aside, finely chopped onion, finely chopped green garlic, garlic-green chili paste, turmeric powder, dhana jeera powder, red chili powder, asafoetida, lemon juice, sugar, salt and finely chopped coriander leaves. Mix well.
  4. Make sure the batter binds well, if it doesn’t bind you can add gram flour.
  5. Heat oil in a kadhai and add 1 tablespoon hot oil into the batter and mix well. This will make our vadas crispy.
  6. Make vadas and deep fry them. Fry them well from all sides and remove them once they turn golden brown.
  7. Surti Ponk Vada is ready.
