In winter season we easily get fresh turmeric in markets. Gujarati
cuisines has a unique recipe prepared from fresh turmeric. Lili Haldar
Nu Shaak is an authentic and classic Gujarati shaak recipe. This
Gujarati recipe is very old and a traditional recipe. In this recipe we
have added green garlic and spring onions to make it tastier &
yummier. Lili Haldar Nu Shaak is prepared in ghee which gives a
different taste to this recipe and is prepared in simple masalas.

Ingredients:
- 150-200 Grams of Fresh Turmeric (Lili Haldal)
- ½ Cup Whisked Curd (Dahi)
- 1 Cup Finely Chopped Green Garlic (Hara Leshun)
- 1 Cup Finely Chopped Spring Onions
- 2 Finely Chopped Tomatoes
- ¾ Cup Green Peas (Matar)
- 1-1.5 Teaspoon Ginger-Green Chili (Adrak-Hari Mirch) Paste
- 1-1.5 Teaspoon of Cumin Seeds (Jeera)
- ½ Teaspoon Asafoetida (Hing)
- 1-1.5 Teaspoon Dhana Jeera Powder
- 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
- 1 Teaspoon Garam Masala
- Coriander Leaves (Dhania)
- Salt
- Ghee
Procedure:
- Wash the fresh turmeric well. Peel it and grate it.
- Heat some ghee and add cumin seeds, asafoetida and add the grated fresh turmeric. Roast the fresh turmeric well in ghee on medium gas for 5-7 minutes.
- Add green garlic and sauté it well.
- Add spring onion, ginger-green chili paste and stir well.
- Add finely chopped tomatoes and green peas. Add some salt and mix well. Close lid and cook for 3-5 minutes.
- Add dhana jeera powder, red chili powder and garam masala.
- Add whisked curd and mix well. Close lid and cook for 2 minutes.
- Garish it with coriander leaves and Lila Haldal Nu Shaak is ready. Serve it with Bajri No Rotlo.
