Ingredients:

  • Methi Muthias
  • 3-4 Diced Sweet Potato (Shakarkand)
  • 2 Diced Purple Yam (Kand)
  • 8-10 Small Brinjals (Baingan)
  • 10-12 Baby Potatoes
  • 50 Grams Surti Papdi
  • 100 Grams Tuver Daana
  • 50 Grams Surti Papdi Daana
  • 50 Grams Green Peas (Matar)
  • 50 Grams Valor Papdi
  • Puree of 2 Tomatoes
  • 1.5-2 Teaspoon Green Chili-Ginger (Hari Mirch-Adrak) Paste
  • 2 Teaspoon Green Garlic (Hara Leshun) Paste
  • 5-6 Cloves (Laung)
  • 5-6 Black Peppercorns (Sabut Kali Mirch)
  • 2 Black Cardamom (Badi Elaichi)
  • 3-4 Cinnamon Stick (Dalchini)
  • 2-3 Bay Leaves (Tej Patta)
  • 3 Dried Red Chilies (Sukhi Lal Mirch)
  • 2 Teaspoon Carom Seeds (Ajwain)
  • 2 Teaspoon Sesame Seeds (Safed Til)
  • 1 Teaspoon Asafoetida (Hing)
  • 1 Teaspoon Turmeric Powder (Haldi)
  • 1.5-2 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
  • 1-1.5 Teaspoon Kashmiri Red Chili (Lal Mirch) Powder
  • 1 Teaspoon Garam Masala
  • Coriander Leaves (Dhania)
  • Salt
  • Water
  • Oil

Procedure:

  1. Heat oil in pressure cooker and add surti papdi, tuver daana, surti papdi daana, green peas and valor papdi. Mix well.
  2. Add salt to boil the vegetables. Add water as per requirement and stir it. Close lid and cook for 2 whistles.
  3. Heat oil to deep fry other vegetables. Deep fry potatoes, shakarkand, purple yam and brinjals one by one and take it out in a bowl.
  4. Now heat 3-4 tablespoons of oil to prepare undhiyu. Add cloves, black peppercorns, black cardamom, cinnamon stick, bay leaves, dried red chilies, carom seeds, sesame seeds and asafoetida. Stir well.
  5. Add green chili-ginger paste and green garlic paste. Stir well.6. Add tomato puree and cook it well.
  6. Add turmeric powder, dhana jeera powder, red chili powder and Kashmiri red chili powder. Mix well.
  7. Add boiled vegetables and stir well.
  8. Add fried vegetables and mix well.
  9. Add salt, garam masala and mix well.
  10. Add water used to boil vegetables and stir well.
  11. Add methi muthias and mix well.
  12. Close lid and cook for 15-20 minutes.
  13. Garnish it with coriander leaves and Gujarati Undhiyu is ready.
