 Bardoli PatraPatra is a popular Gujarati Farsan recipe. This recipe is prepared using patra leaves and a batter of gram flour. Usually, patras are steamed but Bardoli style patra recipe is prepared by deep frying the patras instead of steaming it. This patra recipe in Gujarati has a different taste as the batter is prepared by using tamarind water which gives a nice tangy taste to it. Deep frying the patras gives a crispy texture to the recipe. This Bardoli Na Patra recipe is very famous in Gujarat and you should try it at home. Recipe: 

Ingredients:
For Patra Masala:

  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Teaspoon Fennel Seeds (Saunf)
  • 1 Teaspoon Coriander Seeds (Sabut Dhania)
  • 8-10 Black Peppercorns (Sabut Kali Mirch)
  • 1 Cinnamon Stick (Dalchini)

For Tamarind Water:

  • 4-5 Pieces of Tamarind (Imli)
  • Jaggery
  • Water

For Making Patra:

  • Patra Leaves
  • 3 Cups of Gram Flour (Besan)
  • ½ Cup of Rice Flour (Chawal ka Atta)
  • 1-1.5 Teaspoon Green Chili-Ginger (Hari Mirch-Adrak) Paste
  • ½ Teaspoon Asafoetida (Hing)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1 Teaspoon Red Chili (Lal Mirch) Powder
  • Salt
  • Oil 

Procedure:

  1. On a pan roast cumin seed, fennel seeds, coriander seeds, black peppercorns and cinnamon stick. Roast on low gas. After it is roasted well, let it cool down and then grind it into a powder.
  2. Boil some water in a utensil to prepare tamarind water. Add tamarind and jaggery. Dissolve the jaggery well. Once it is ready let it rest for 5-10 minutes.
  3. Filter the tamarind water using a hole sieve.
  4. Cut the stem of patra leaves.
  5. For batter take gram flour and add rice flour, green chili-ginger paste, asafoetida, dhana jeera powder, turmeric powder, red chili powder, previously prepared masala, salt and mix well.
  6. Add tamarind water and prepare batter. Make sure no lumps remain in the batter.
  7. Take one patra leaf and apply the batter. Place the second leaf in reverse direction and apply the batter again. Similarly place two more leaves and apply the batter. Fold from the sides and roll it. Make sure you roll it tightly. Prepare all the rolls in similar way.
  8. Cut the roll into pieces.
  9. Heat oil and deep fry the pieces. Make it nice crispy and golden. Bardoil Style Patra is ready.
