SuvaliSuvari or Kharkharia is a traditional Gujarati recipe which is prepared in every Gujarati home especially during Diwali. This Diwali recipe in Gujarati is very simple and needs very less ingredients. When a Diwali recipe is easy to make, we love it to enjoy. Suvari is the just right Gujarati recipe to prepare and enjoy with your family. Gujarati Suvari is prepared either with maida or wheat flour. I have prepared it with maida as with maida it becomes crispier. Once in a while it is ok to not be health conscious. Recipe: 

Ingredients:

  • 2 Cups Plain Flour (Maida)
  • ½ Cup Milk
  • ½ Cup Sugar
  • 2 Teaspoon Sesame Seeds (Til)
  • ¾ Teaspoon Cardamom (Elaichi) Powder
  • 2-4 Tablespoons Ghee
  • Oil 

Procedure:

  1. Heat milk in a utensil and add sugar. Dissolve the sugar well.
  2. Pass the plain flour through hole sieve before using it for making suvari. In plain flour add sesame seeds, cardamom powder and ghee. Mix well and make sure the flour binds well. If it doesn’t bind add little ghee to it.
  3. Now add the prepared milk and knead the dough. Knead the dough in milk and don’t use water to make perfect suvari.
  4. Let the dough rest for 10-15 minutes.
  5. After resting knead it again and make small portions out of it. Roll it into small puris.
  6. Heat oil and deep fry the puris. We need a light brown colour so fry it accordingly on medium gas. Suvari will be soft when hot and as it cools it will become crispy. You can also deep fry them in ghee. 
  7. Gujarati Suvari is ready for Diwali.
