Recipe: Ingredients:
- 1 Litre Milk
- 2 Tablespoons of Vinegar
- 1 Tablespoon of Plain Flour (Maida)
For Sugar Syrup:
- 1 Cup Sugar
- 4 Cups of Water
- 3-4 Cardamom (Elaichi)
- Boil 1 Litre of milk. Once the milk starts to overflow, switch off the gas.
- Add vinegar and mix well. The milk solids will get separated from the milk.
- Drain the milk solids using a cloth. Squeeze it little to remove the excess water. But don’t make the chenna excessively dry.
- Now knead the chenna well for 5-10 minutes.
- Add plain flour and knead it well. Make it smooth and soft.
- Make small balls out of it. The rasgullas would expand in size so prepare small size.
- In a kadhai add sugar and water in the proportion of 1:4. Dissolve the sugar completely and then add cardamom. While adding the cardamom break it and then add it. Let the syrup boil well.
- In boiling syrup add the prepared balls one by one. Close lid and let it boil for 8-10 minutes.
- Open lid and boil it for another 2-3 minutes.
- Remove the rasgullas in a bowl and let it rest for 4-5 hours so that the syrup is absorbed well. Don’t keep them in refrigerator or else it will become little hard.
- Rasgullas are ready to enjoy with your friends and family.
