Pav Bhaji

Ingredients:
For Boiling Vegetables:
  • 2-3 Potatoes
  • 1 Capsicum (Shimla Mirch)
  • 1-2 Carrots (Gajar)
  • 1 Cup Green Peas (Matar)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Salt
  • Water
For Masala:
  • 2 Finely Chopped Onion
  • Puree of 2 Tomatoes
  • 1-1.5 Teaspoon Ginger-Garlic (Adrak-Lehsun) Paste
  • 1.5-2 Teaspoon Red Chili (Lal Mirch) Powder
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Pav Bhaji Masala
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Juice of ½ Lemon
  • ½ Teaspoon Sugar
  • Coriander Leaves (Dhania)
  • Salt
  • Water
  • Butter
  • Oil
Procedure:
  1. In a pressure cooker add potatoes, capsicum, carrots and green peas. Add turmeric powder, salt and water. Mix well. Pressure cook for 5-6 whistles.
  2. Once the vegetables are boiled, mash it.
  3. For masala heat some oil and add some butter. Melt it well.
  4. Add finely chopped onion and make it golden brown.
  5. Add ginger-garlic paste and tomato puree. Stir well.
  6. Add turmeric powder, dhana jeera powder, red chili powder and pav bhaji masala. Sauté it on low gas.
  7. Add the mashed & boiled vegetables and mix well.
  8. Add salt and water. Stir well.
  9. Add sugar and mix it.
  10. Close lid and cook for 5-7 minutes.
  11. Add lemon juice and mix well. Top it with butter and coriander leaves.
  12. Roast the pavs in butter and our Pav Bhaji is ready.
