Palak Na Thepla - Gujarati Theplas

Ingredients:
  • 1 Cup Finely Chopped Spinach (Palak)
  • 1 Cup Wheat Flour (Gehun ka Atta)
  • ¼ Cup Bajra Flour
  • ¼ Cup Jowar Flour
  • ¼ Gram Flour (Besan)
  • 1-1.5 Teaspoon Green Chili-Garlic (Hari Mirch-Adrak) Paste
  • 1 Teaspoon Carom Seeds (Ajwain)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1.5-2 Teaspoon Sesame Seeds (Safed Til)
  • ¼ Teaspoon Asafoeitda (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Coriander Leaves (Dhania)
  • Salt
  • Oil
  • Water
Procedure:
  1. Take wheat flour, add bajra flour, jowar flour, gram flour, green chili-garlic paste, carom seeds, cumin seeds, sesame seeds, asafoetida, turmeric powder, coriander leaves, finely chopped spinach leaves, salt, some oil and water. Mix well and knead a dough.
  2. Apply some oil and make the dough smooth. Cover it and let it rest for 10 minutes.
  3. Take a portion of dough, dust it with flour and roll a small roti. Apply some oil to it and fold it in triangle shape. Now again roll it into a thepla.
  4. Roast this thepla on tawa. Apply oil while roasting the thepla.
  5. Palak na thepla are ready, enjoy with tea or with athanu.
