Dahi Baingan
Doi Begun is popular Bengali recipe which is prepared using eggplant. The eggplant is shallow fried and then it is cooked in curd based gravy. The taste of this recipe is totally different and is simply delicious. This baingan recipe is a must try recipe. We usually make bharela baingan or baingan batata, give a try to this recipe and enjoy baingan in Bengali style.


Recipe:
Ingredients:
  • 250-300 Grams of Brinjals (Ringan)
  • 1 Cup Whisked Curd (Dahi)
  • 2 Lengthwise Chopped Green Chili (Hari Mirch) Powder
  • 1-1.5 Teaspoon Ginger-Garlic (Adrak-Lehsun) Paste
  • ¼ Cup Poppy Seeds (Khuskhus) Paste
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ¼ Teaspoon Turmeric (Haldi) Powder
  • 1.5 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
  • 1 Teaspoon Garam Masala
  • 1 Teaspoon Sugar
  • Coriander Leaves (Dhania)
  • Salt
  • Water
  • Oil
Procedure:
  1. Cut slices of bringals. Sprinkle turmeric powder and red chili powder. Cover both sides with the masala. Let it rest for 5-10 minutes.
  2. Shallow fry these slices in oil. Fry them till they become crisp and golden brown. Remove them in a bowl.
  3. For gravy heat some oil and cumin seeds, lengthwise chopped green chili and ginger-garlic paste. Stir well.
  4. Add poppy seeds paste. To make this paste grind 2-3 teaspoons of poppy seeds (khuskhus) with water.
  5. Add turmeric powder, dhana jeera powder and red chili powder. Mix well.
  6. Switch off the gas and whisked curd. Mix well and then switch on the gas.
  7. Add sugar, salt and some water. Mix well.
  8. Let the gravy come to a boil and then add garam masala and shallow fried brinjals. Stir well.
  9. Let it cook for 1-2 minutes and garnish with coriander leaves. Dahi Ringan is ready.
