Methi Handvo Recipe

Recipe:
Ingredients:
  • 2 Cups of Finely Chopped Fenugreek (Methi)
  • 1 Cup Semolina (Rava)
  • ¼ Cup Gram Flour (Besan)
  • ½ Cup Curd (Dahi)
  • 1.5-2 Teaspoon Green Chili-Ginger (Hari Mirch-Adrak) Paste
  • Finely Chopped Coriander Leaves (Dhania)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Salt
  • Water

For Tempering:

  • 1 Teaspoon Mustard Seeds (Rai)
  • 1-2 Teaspoon Sesame Seeds (Safed Til)
  • 2-3 Dried Red Chilies (Sukhi Lal Mirch)
  • 8-10 Curry Leaves (Kadi Patta)
  • ¼ Teaspoon Asafoetida (Hing)
  • Oil

Procedure:

  1. In a bowl take semolina, gram flour, curd, finely chopped fenugreek leaves, salt, turmeric powder, green chili-ginger paste and coriander leaves. Mix well.
  2. Add water and prepare the batter. Let t rest for 10 minutes.
  3. After 10 minutes add 2 teaspoons of hot oil to the batter. This makes the batter fluffy and soft.
  4. In a greased mould add the batter.
  5. Heat some water in kadhai and place a stand. Place the mould over it and close the lid. Steam for 15-20 minutes.
  6. Cut pieces in the mould and remove it in a plate.
  7. Heat some oil in pan and add mustard seeds, sesame seeds, asafoetida, curry leaves, dried red chilies and stir well.
  8. Place the pieces and shallow fry them. Methi Handvo is ready.
