Suranache Kaap
Suranache Kaap is a popular Maharashtrian recipe prepared by shallow frying boiled and sliced suran or yam. Suran is marinated in a simple masala and is coated with rice flour and semolina to give a nice crispy coating. This Maharashtrian recipe is very easy to make and very quick. Recipe: Ingredients:
  • Suran (Jimikand)
  • 4-5 Green Chilies (Hari Mirch)
  • 8-10 Garlic Cloves (Lehsun)
  • 1-1.5 Inch of Ginger (Adrak)
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Finely Chopped Coriander Leaves (Dhania)
  • Salt
  • Oil
For Flour Mix:
  • ¾ Cup Semolina (Rava)
  • 2 Tablespoons of Rice Flour (Chawal Ka Atta)
  • 1 Teaspoon Red Chili (Lal Mirch) Powder
  • Salt
Procedure:
  1. Apply oil to your palms and peel the jimikand (suran). Then cut slices out of it. Keep the slices slightly thick.
  2. In an utensil boil some water, add salt and juice of lemon. Add the suran slices and half boil it for 10-15 minutes.
  3. Prepare a paste of green chilies, garlic and ginger.
  4. In a mixing bowl add the paste, coriander leaves, red chili powder, turmeric powder and salt. Mix it well and prepare the marinade.
  5. Add the half boiled suran slices into the marinade and coat it well with it. Let it rest for 10-15 minutes.
  6. Now in plate take semolina, rice flour, red chilli powder and salt. Mix it well.
  7. Cover the marinated suran slices with this flour mix and shallow fry it in oil.
  8. Make the slices nice golden brown and crisp. Tasty Maharashtrian Suranache Kaap are ready.
