Muthia is prepared using fenugreek leaves and gram flour and then are deep fried. The muthias are then added to a nice tasty green masala gravy along with lilva tuvar. Dana Muthia nu Shaak has a little bit similar taste of Undhiyu and is garnished with some finely chopped green garlic which gives an excellent taste to this traditional Surti Dana Muthia Nu Shaak. Recipe: Ingredients:
  • Muthias
  • 300 Grams of Pigeon Peas (Lilva Tuvar)
  • 1 Cup Coriander Leaves (Dhania)
  • 1 Cup Finely Chopped Green Garlic (Hara Lehsun)
  • 6-8 Green Chilies (Hari Mirch)
  • 1-1.5 Inch of Ginger (Adrak)
  • 1 Teaspoon Carom Seeds (Ajwain)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • Salt
  • Oil
Procedure:
  1. In a cooker heat some oil and add carom seeds. Add pigeon peas (Lilva Tuvar) and sauté it well in oil.
  2. Add turmeric powder and salt. Mix well.
  3. Add some water and pressure cook for 1 whistle.
  4. Now in a mixer take ginger, green chilies, finely chopped green garlic and coriander leaves. Grind it into a paste.
  5. Heat some oil in kadhai and fry the paste. Add the pigeon peas and mix well.
  6. Add dhana jeera powder and salt. Stir well.
  7. Now add the muthias in the gravy and stir well.
  8. Close lid and cook for 2-3 minutes.
  9. Garnish it with some chopped green garlic and our Dana Muthia Nu Shaak is ready.
