Dhaba Masala Khichdi
Khichdi is a popular Gujarati dish which is very healthy and is an important part of Gujarati cuisine. Gujarati Khichdi recipe is prepared in different ways and each way has it’s unique taste. Today we will prepare Dhaba style Masala Khichdi. This Dhaba Masala Khichdi is full of vegetables and I have used three types of dals namely masoor, moong dal and green moong dal in this Khichdi recipe. This is a very quick Khichdi recipe as we have prepared it in pressure cooker. Try out this Khichdi recipe in Gujarati and let me know how was the taste.
Recipe: Ingredients:
  • 1.5 Cups of Washed Rice
  • 1.5 Cups of Washed Mix Dals (Masoor, Moong Dal, Green Moong Dal)
  • 8-10 Chopped French Beans (Fansi)
  • ½ Cup Pigeon Peas (Tuvar Daana)
  • 2 Lengthwise Chopped Tindora (Tinde)
  • 1-2 Diced Potatoes
  • 1 Finely Chopped Onion
  • 1.5- 2 Teaspoons of Ginger-Garlic (Adrak-Lehsun) Paste
  • 8-10 Curry Leaves (Kadi Patta)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1.5-2 Teaspoon of Red Chili (Lal Mirch) Powder
  • 1 Teaspoon Garam Masala
  • Salt
  • Ghee
For Garnish:
  • Finely Chopped Spring Onions
  • Finely Chopped Green Garlic (Hara Lehsun)
Procedure:
  1. In a pressure cooker add washed rice, washed mix dals, chopped French beans, pigeon peas, chopped tindora, lengthwise chopped carrots, diced potatoes, turmeric powder and salt. Add water to boil all the ingredients. Close lid and pressure cook for 2 whistles.
  2. Heat some ghee and add cumin seeds, curry leaves, asafoetida and chopped onions. Stir till the onions turn golden brown.
  3. Add ginger-garlic paste and sauté it.
  4. Add turmeric powder, dhana jeera powder, red chili powder, garam masala and salt. Stir and fry the masala well.
  5. Add the boiled rice-dal-veggies into it and mix well.
  6. Garnish it with some finely chopped green garlic and finely chopped spring onions.
  7. Dhaba Masala Khichdi is ready.
