Surti Petis

Ingredients:
  • 7-8 Boiled & Mashed Potatoes
  • 3 Tablespoons of Rice Flour (Chawal Ka Atta)
  • ½ Cup Roasted Peanut (Singdana) Powder
  • ½ Cup Finely Chopped Green Garlic (Hara Lehsun)
  • ½ Cup Grinded Dried Coconut (Sukha Nariyal)
  • 1 Teaspoon Fennel Seeds (Saunf) Powder
  • 1.5-2 Teaspoons of Ginger-Green Chili (Adrak-Hari Mirch) Paste
  • 1-1.5 Teaspoons of Sesame Seeds (Safed Til)
  • 1 Teaspoon Garam Masala
  • Juice of 1 Lemon
  • Pomegranate Seeds (Anar)
  • Chopped Cashew Nuts (Kaju)
  • Raisins (Kishmish)
  • 1 Teaspoon Sugar
  • Salt
  • Oil
Procedure:
  1. Take around ½ cup of boiled and mashed potatoes for making the stuffing. Add grinded dried coconut, roasted peanut powder, ginger-green chili paste, chopped coriander leaves, finely chopped green garlic, sesame seeds, fennel seeds powder, garam masala, salt, sugar, pomegranate, cashew nuts, raisins and lemon juice. Mix all the ingredients well.
  2. Now apply some oil on your palms and make small balls of the stuffing.
  3. For the covering take the remaining boiled potatoes and mash them well to make it smooth. Add rice flour, salt and about 2 teaspoons of oil to the potatoes. Knead it well to make a dough.
  4. Take a portion of dough and make ball out of it. Flatten it and add the stuffing inside it and close it from all ends. Roll it to make a pattice. Roll the petis in rice flour.
  5. Heat oil and deep fry the petis. Fry it on medium flame and make them golden brown.
  6. Once ready remove it in a bowl.
