Recipe: Ingredients:
  • 1 Cup Coarse Wheat Flour (Gehun Ka Atta)
  • 1 Cup Coarse Urad Dal Flour
  • ½ Cup Coarsely Grinded Fengreek Seeds (Methi Ke Daane)
  • ¾ Cup Grinded Dried Coconut (Suka Nariyal)
  • ½ Cup Grinded Poppy Seeds (Khuskhus)
  • 2 Tablespoons Grinded Almonds (Badam)
  • 1.5 Tablespoons of Ganthola Powder
  • 1.5 Tablespoons of Dried Ginger Powder (Sonth)
  • 2 Cups of Jaggery (Gud)
  • 1.5 Cups of Ghee
  • Chopped Almonds (Badam)
Procedure:
  1. Heat 2-3 tablespoons of ghee in a kadhai to roast the flours. Add coarse wheat flour and coarse urad dal flour and roast them well. Roast it well for 10-12 minutes. If required you can add more ghee. Begin with less amount of ghee and then add if required, this will ensure you get the right texture.
  2. Once the flour becomes brown and absorbs all the ghee well, remove it in a bowl.
  3. In the same kadhai take 2-2.5 tablespoons of ghee and melt it. Add jaggery and melt it. We need to just melt the jaggery and make sure you don’t over cook it or else it will become hard.
  4. Now add the roasted flour and mix well. Add grinded fenugreek seeds, grinded dried coconut, grinded poppy sides, ganthola powder and dried ginger powder and mix well. Keep the gas flame medium.
  5. Add grinded almonds and roast for 3-5 minutes.
  6. Now grease a mould or plate with ghee and pour the mixture in it. Spread the mixture evenly and garnish it with chopped almonds.
  7. After 5 minutes cut it into pieces and let it rest for 1-2 hours. After it is set remove it from the mould. Methi Pak is ready.
