Dum Aloo

Recipe: Ingredients: For Masala :
  • 3-4 Cardamom (Elaichi)
  • 5-6 Cloves (Laung)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Teaspoon Fennel Seeds (Saunf)
For Making Sabji:
  • 15-18 Baby Potatoes
  • 1 Finely Chopped Onion
  • 2 Finely Chopped Tomato
  • ½ Cup Curd (Dahi)
  • 2-3 Finely Chopped Green Chilies (Hari Mirch)
  • 8-10 Finely Chopped Garlic Cloves (Lehsun)
  • 1-1.5 Inch Finely Chopped Ginger (Adrak)
  • Finely Chopped Coriander Leaves (Dhania)
  • 2 Bay Leaves
  • ¼ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1.5-2 Teaspoon Red Chili (Lal Mirch) Powder
  • Salt
  • Water
Procedure:
  1. In a pressure cooker add baby potatoes, salt and water. Boil them well.
  2. Prick the boiled potatoes and then shallow fry them in oil.
  3. In a kadhai roast cardamom, cloves, cumin seeds and fennel seeds. Roast it well, let it cool and grind it into a powder.
  4. Now for gravy heat some oil and add bay leaves, asafoetida, finely chopped garlic cloves, finely chopped ginger and finely chopped green chilies. Stir well.
  5. Add finely chopped onion and stir till it turns transparent.
  6. Add finely chopped tomato and sauté it well.
  7. Add turmeric powder, dhana jeera powder, red chili powder and salt. Mix well.
  8. Add curd and prepared masala. Stir well.
  9. Add the potatoes and mix well.
  10. Add water as per requirement and prepare gravy. Close lid and cook for 2-3 minutes.
  11. Add some coriander leaves and our dum aloo is ready.
