Dal Dhokli Gujarati Dish

Recipe: Ingredients: For Dhoklis:
  • 1.5 Cup of Wheat Flour (Gehun Ka Atta)
  • 1 Tablespoon Gram Flour (Besan)
  • 1 Teaspoon Carom Seeds (Ajwain)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
  • Salt
  • Oil
For Dal:
  • 1-1.5 Cups of Tur Dal
  • 1-1.5 Teaspoon Green Chili-Ginger (Hari Mirch-Adrak) Paste
  • 3-4 Kokum
  • 1 Teaspoon Red Chili (Lal Mirch) Powder
  • 1 Teaspoon Dhana Jeera Powder
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Juice of 1 Lemon
  • Coriander Leaves (Dhania)
  • Jaggery
  • Salt
For Tempering:
  • 1 Cinnamon Stick (Dalchini)
  • 4-5 Cloves (Laung)
  • 10-12 Curry Leaves (Kadi Patta)
  • 3-4 Dried Red Chilies (Sukhi Lal Mirch)
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ¼ Teaspoon Asafoetida (Hing)
  • Ghee
Procedure:
  1. In a cooker add tur dal and some water to boil the dal. It will be boiled in 3-4 whistles.
  2. Meanwhile for dhoklis, in a mixing bowl add wheat flour, gram flour, turmeric powder, red chili powder, carom seeds, salt and some oil. Mix well and knead a dough. Knead it as we do for a paratha dough. Apply oil and make the dough even. Cover it and rest for 10 minutes.
  3. Roll out a big roti from the dough. Keep it little bit thin.
  4. Roast the roti slightly on tawa, roast it till it is half cooked from both sides. Similarly prepare rotis from the remaining dough.
  5. Now when dal is boiled well, open the lid of the cooker and whisk the dal well.
  6. Switch on the gas and add water and stir well. Add little bit more water as it will be absorbed by the dhoklis.
  7. Add turmeric powder, red chili powder, dhana jeera powder, green chili-ginger paste and mix well.
  8. Add kokum, lemon juice and jaggery. Add salt as per taste and mix well. Let the dal come to a boil.
  9. Cut the previously prepared rotis into diamond shaped dhoklis and add them to the dal. Stir well.
  10. Cook the dhoklis for 2-3 minutes.
  11. Now for tadka heat some ghee and add mustard seeds, cumin seeds, asafoetida, cinnamon sticks, cloves, dried red chilies and curry leaves. Pour this tadka on the dal and mix well.
  12. Garnish it with coriander leaves and while serving it pour some ghee on top.
