Drumstick Aloo Sabji
Sargava Nu Shaak is a recipe for everyday cooking. In Gujarati Sargava Batata Nu Shaak we will use traditional masalas to cook drumsticks and potatoes. In this Drumstick Sabji I have used masalas which are easily available at our home. Try out this Gujarati recipe and don’t forget to comment about the taste.

For Garlic Chutney:
  • 8-10 Garlic Cloves (Lehsun)
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
For Shaak:
  • 4-5 Boiled Drumsticks (Saragva)
  • 2 Boiled & Diced Potatoes
  • 1 Finely Chopped Onion
  • 1.5 Cup of Curd (Dahi)
  • 1 Tablespoon Gram Flour (Besan)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ¼ Teaspoon Asafoetida (Hing)
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1.5-2 Teaspoon Red Chili (Lal Mirch) Powder
  • Coriander Leaves (Dhania)
  • Jaggery
  • Salt
  • Water
  • Oil
  1. Add gram flour to curd and whisk it well. Add water and prepare the curd mixture. Make sure there are no lumps in the mixture.
  2. In a pestle grind garlic cloves and red chili powder to prepare garlic chutney.
  3. Heat oil and add mustard seeds, cumin seeds, asafoetida and finely chopped onion. Stir till onion turns golden brown.
  4. Add garlic chutney and sauté it well.
  5. Add turmeric powder, red chili powder and dhana jeera powder. Mix well. Add curd mixture and mix well.
  6. Add water as per requirement and prepare the gravy. Let it come to a boil.
  7. Add salt, jaggery and stir well.
  8. Add boiled drumsticks and potatoes. Cook it well.
  9. Garnish it with coriander leaves and Gujarati Sargva Nu Shaak is ready.
