Recipe: Ingredients:
  • 3-4 Diced Eggplant (Baingan)
  • 3-4 Diced Potatoes
  • 2 Chopped Tomatoes
  • 1.5-2 Teaspoon Ginger-Garlic (Adrak-Lehsun) Paste
  • 1 Teaspoon Green Chili (Hari Mirch) Paste
  • 1 Teaspoon Mustard Seeds (Rai)
  • ¼ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1.5-2 Teaspoon Red Chili (Lal Mirch) Powder
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1.5 Teaspoon Achar Masala
  • Coriander Leaves (Dhania)
  • Jaggery (Gud)
  • Salt
  • Water
  • Oil
Procedure:
  1. Heat oil and add mustard seeds, asafoetida, ginger-garlic paste, green chili paste and turmeric powder. Sauté it well.
  2. Add chopped tomatoes and let it cook well.
  3. Add diced potatoes and stir well. Add salt to cook the potatoes. Close lid and cook the potatoes.
  4. Now add diced eggplant and mix well.
  5. Add dhana jeera powder, red chili powder, achar masala, jaggery and little salt. Mix the masala well.
  6. Close lid and let it cook for 3-5 minutes.
  7. Add water and stir well. Again close lid and let it cook.
  8. Add some coriander leaves and Ringan Batata is ready.
