Today we will make traditional Gujarati Khichdi recipe. This Khichdi recipe in Gujarati is prepared using raw mangoes which gives a nice taste to the Khichdi. Ingredients:
- 2 Cups of Rice
- 1 Cup of Tur Dal
- 1 Diced Raw Mango
- 2 Diced Potatoes
- ½ Cup Green Peas (Mattar)
- 2 Lengthwise Chopped Onions
- 2 Finely Chopped Green Chilies (Hari Mirch)
- 1-1.5 Inch Finely Chopped Ginger (Adrak)
- 1 Teaspoon Cumin Seeds (Jeera)
- ½ Teaspoon Asafoetida (Hing)
- ½ Teaspoon Turmeric Powder (Haldi)
- 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
- Ghee
Procedure:
- Heat some ghee and add cumin seeds, asafoetida, finely chopped green chilies, finely chopped ginger and stir well.
- Add chopped onions and stir till it turns transparent.
- Add turmeric powder, red chili powder and mix well.
- Add diced potatoes and sauté it well.
- Add raw mangoes and green peas. Mix well.
- Add salt to cook the vegetables. Close lid and cook for 2-3 minutes.
- Add washed rice and tur dal. Mix well.
- Add salt, sugar and some water. Stir well and let it come to a boil.
- Add some ghee from top and give it a stir. Close lid and cook for 15-20 minutes. In between you can open lid and stir so that the khichdi doesn’t stick to bottom. Bardoli Khcihdi is ready.
