Osaman | Traditional Gujarati Recipe | Healthy Osaman Recipe

Osaman is a traditional Gujarati recipe. In this Gujarati recipe I have prepared Osaman using Tur dal, you can also prepare using Moong Dal. This recipe is highly nutritious and is very quick to prepare. Osaman is enjoyed with rice and lachko dal. Ingredients:
  • 1 Cup Tur Dal
  • 1-1.5 Teaspoon Green Chilli-Ginger (Hari Mirch-Adrak) Paste
  • 8-10 Curry Leaves (Kadi Patta)
  • 3-4 Cinnamon Sticks (Dalchini)
  • 4-5 Cloves (Laung)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ¼ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1 Teaspoon Dhana Jeera Powder
  • 1 Teaspoon Red Chilli Powder
  • Juice of ½ Lemon
  • Jaggery (Gud)
  • Salt
Procedure:
  1. Add 4-5 cups of water to 1 cup tur dal and boil it in pressure cooker.
  2. Drain the water and collect it in a vessel. We will use this water to prepare Osaman. The dal can be used to make Lachko Dal.
  3. Now heat ghee in an utensil and add cumin seeds, asafoetida, cinnamon sticks, cloves and curry leaves. Add green chili-ginger paste and stir well.
  4. Add the dal water and let it come to a boil.
  5. Add turmeric powder, dhana jeera powder, red chilli powder, salt and jaggery. Stir well.
  6. Switch off the gas and add lemon juice. Osaman is ready.
