Ringan Nu Bharthu | Baingan ka Bharta | Ringan Nu Shaak

We will make village style Ringan Nu Bharthu. Ringan Nu Bharthu is prepared in various ways and today we will make Maharashtrian style Baingan Bharta. We have not used any masalas in the recipe but still this baingan recipe is simply delicious. We have used roasted green chilies, singdana, dhania and jeera to make this Maharashtrian recipe tasty. Enjoy this recipe with Bajra Na Rotlo.
Recipe:
Ingredients:
  • 500 Grams Eggplant (Baingan)
  • 7-8 Green Chilies (Hari Mirch)
  • 100-200 Grams Finely Chopped Spring Onions
  • 1-2 Finely Chopped Onion
  • ¼ Cup Coriander Leaves (Dhania)
  • 2-3 Teaspoons Roasted Peanut (Singdana) Powder
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Teaspoon Mustard Seeds (Rai)
  • Oil
  • Salt
Procedure:
  1. Make a cut in the eggplant to check if they are not rotten.
  2. Apply oil to these eggplant and roast them directly on gas flame till they turn black from all sides. Let them cool down and then peel the burnt skin. Mash the eggplant.
  3. Roast green chilies on gas flame. In crush green chilies and coriander leaves and prepare a paste.
  4. Heat some oil and add cumin seeds, mustard seeds and onion. Stir till onion turns golden brown. 
  5. Now add spring onions and let it settle down. Add the prepared paste and stir well. 
  6. Add the mashed eggplant, salt and mix well.
  7. Add roasted peanut powder and mix well. Cook it for a while and Baingan Bharta Maharashtrian style is ready. Serve it with Bajra No Rotlo.
