Poha is a very healthy and easy recipe to make. You can enjoy poha either for breakfast or even for dinner. This beginner breakfast recipe is so simple that anyone can prepare it. I have tried to use minimum ingredients to make this poha tasty & quick to prepare. To make this Gujarati poha recipe even tasty I have used grated coconut and coriander for garnish.

- 2 Cups of Poha (Flattened Rice)
- 1 Finely Chopped Onion
- ¼ Cup Peanuts (Singdana)
- 1 Teaspoon Mustard Seeds (Rai)
- 1 Teaspoon Cumin Seeds (Jeera)
- 2-3 Finely Chopped Green Chilies (Hari Mirch)
- 8-10 Curry Leaves (Kadi Patta)
- ½ Teaspoon Turmeric Powder (Haldi)
- Juice of ½ Lemon
- 1 Teaspoon Sugar
- Grated Coconut
- Coriander Leaves (Dhania)
- Salt
- Oil
- Soak poha and drain the water well.
- Heat oil and add mustard seeds, cumin seeds, curry leaves and peanuts. Stir well.
- Add chopped onion and stir till it turns golden brown. Add finely chopped green chilies and stir well.
- Now add turmeric powder and stir well. Add soaked poha and stir well.
- Add salt, sugar and lemon juice and mix well.
- Once the poha is ready add some coriander leaves.
- Serve the poha in a plate and garnish with grated coconut and coriander leaves.
