Tawa Kulcha Recipe - Amritsar Aloo Kulcha Recipe - Easy Punjabi Recipes

Amritsar is famous for it’s Kulcha and today we will make Amritsari Aloo Kulcha at home. This street food recipe of Amritsar is best enjoyed with chole. Chole Kulcha is simply lip smacking dish. In this recipe we will make a quick stuffing of boiled potatoes and some spicy and tangy masalas. This stuffing will be stuffed in a Kulcha and we will be make this Kulcha on tawa. Ingredients:
For Stuffing:
  • 5-6 Potatoes
  • 1 Finely Chopped Onion
  • 2-3 Finely Chopped Green Chilies (Hari Mirch)
  • 1 Inch Finely Chopped Ginger (Adrak)
  • ½ - ¾ Teaspoon Turmeric Powder
  • 1 Teaspoon Red Chili (Lal Mirch) Powder
  • 1 Teaspoon Dhana Jeera Powder
  • ½ Teaspoon Chaat Masala
  • ½ Teaspoon Garam Masala
  • ½ Teaspoon Dried Mango (Amchur) Powder
  • Salt
  • Coriander Leaves
For Kulcha Dough:
  • 2 Cups Plain Flour (Maida)
  • 2-3 Teaspoons Curd (Dahi)
  • ½ Teaspoon Baking Powder
  • 1 Teaspoon Sugar
  • Salt
  • Water
  • Oil
For Preparation:
  • Plain Flour
  • Kalonji
  • Coriander Leaves
  • Water
Procedure:
  1. Boil potatoes in a pressure cooker.
  2. Meanwhile taking plain flour, add salt, baking powder, sugar, curd and mix well. Add water and knead dough. Add some oil to make the dough soft and even. Now cover it and let it rest for 1 hour.
  3. Now peel the boiled potatoes and take them in a bowl. Mash the potatoes and then add finely chopped onion, finely chopped green chilies, finely chopped ginger, turmeric powder, red chili powder, dhana jeera powder, garam masala, dried mango powder, salt and coriander leaves. Mix well and prepare the stuffing.
  4. Take a portion of dough and roll it into a small circle and take a portion of the stuffing and place it in middle of the rolled dough. Close the ends of the dough and roll it into a Kulcha. You can even pat it with your palms to make an even Kulcha. Add kalonji and coriander leaves on the Kulcha and apply pressure to stick it.
  5. Now turn the Kulcha and apply water so that it sticks to the tawa.
  6. Put the wet side of Kulcha on Tawa and roast it well. Once you see some small bubbles on Kulcha turn the Tawa and roast the Kulcha on the flame directly. Keep the flame low to medium and roast the Kulcha well. It will take 3-5 minutes for this process.
  7. Serve the Kulcha on a plate and apply butter to the Kulcha. Aloo Kulcha on Tawa is ready.
