Moong Dal Kachori - Rajasthani Style Kachori Recipe

For Dough:
  • 1 Cup of Refined Flour (Maida)
  • 3 Tablespoons of Warm Ghee
  • Salt
  • Water
For Stuffing:
  • 1 Cup Soaked Moong Dal
  • 1 Tablespoon Gram Flour (Besan)
  • 2-3 Finely Chopped Green Chilies (Hari Mirch)
  • 1-1.5 Inch Finely Chopped Ginger (Adarak)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Teaspoon Coarsely Grinded Black Pepper (Sabut Kali Mirch)
  • 1-1.5 Teaspoon Coarsely Grinded Coriander Seeds (Sabut Dhania)
  • 1 Teaspoon Coarsely Grinded Fennel Seeds (Saunf)
  • ½ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Red Chili (Lal Mirch) Powder
  • ¾ Teaspoon Garam Masala
  • Juice of 1 Lemon
  • Coriander Leaves (Dhania)
  • Salt
  • 1 Teaspoon Sugar
  • Oil
Procedure:
  1. In refined flour add salt and warm ghee and mix well. Mix it well till the ghee is completely absorbed by the flour. Now add water and knead a soft dough. Let it rest for 10 minutes.
  2. Drain the water from the soaked moong dal and grind it coarsely.
  3. Now in a kadhai heat some oil and add cumin seeds, coarsely grinded black pepper, coarsely grinded coriander seeds, coarsely grinded fennel seeds and stir well.
  4. Add finely chopped green chilies, finely chopped ginger, asafoetida and stir well. Add gram flour and roast it well.
  5. Add turmeric powder, red chili powder, dhana jeera powder and garam masala. Mix well. Add grinded moong dal and stir till it becomes dry.
  6. Add lemon juice, salt and sugar. Stir well and add coriander leaves. Switch off the gas and let the stuffing cool down.
  7. Take a portion of the dough and roll it into a small puri and add the stuffing. Close the ends and make a kachori. Flatten it little bit.
  8. Deep fry the Kachoris in oil till they become fluffy and golden brown. Khasta Kachori is ready.
