Surat Ratalu Puri Recipe - Surat Street Food - Surti Bhajiya

Surat is the food capital of Gujarat and today I will show how to make Surti Ratalu Puri. This recipe is also known as Surti Kand Na Bhajiya. The recipe is very quick and extremely tempting. Ratalu Puri is popular on Dumas beach of Surat.
Recipe:
Ingredients:
  • Purple Yam
  • 1.5- 2 Cups of Gram Flour (Besan)
  • 2 Tablespoons of Rice Flour (Chawal ka Atta)
  • 10-15 Black Peppercorns (Sabut Kali Mirch)
  • 1 Teaspoon Coriander Seeds (Sabut Dhania)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1.5-2 Teaspoon Red Chili (Lal Mirch) Powder
  • ¼ Teaspoon Asafoetida (Hing)
  • Salt
  • Water
  • Oil
Procedure:
  1. In a mixing bowl take gram flour and add rice flour, turmeric powder, red chili powder, dhana jeera powder, asafoetida and salt. Add water and prepare batter for bhajiyas.
  2. Crush black peppercorns and coriander seeds.
  3. Slice purple yam. Make sure to keep the slices thin.
  4. Heat some oil to deep fry bhajiyas. Add this hot oil to the batter to make the bhajiyas crispy. Dip the purple yam in batter and cover it well. Add some crushed coriander seeds and black peppercorns over the bhajiyas and deep fry them. Ratalu Puri is ready.
