Insant Carrot Pickle - Gujarati Gajar Nu Athanu - Gujarati Pickle Recipe

Carrot Pickle or Gajar Nu Athanu is an instant pickle recipe to make. This pickle is easy to prepare and consists of minimum ingredients. You can make this pickle instantly and can store it in an air tight jar. The pickle is very yummy and can be enjoyed with parathas or even with rotis.
Recipe:
Ingredients:
  • 1 Cup Lengthwise Chopped Carrots (Gajar)
  • ¾ Cup Lengthwise Green Chilies (Hari Mirch)
  • Juice of 1 Lemon
  • 1-1.5 Teaspoon Split Mustard Seeds (Rai Na Kuria)
  • ¾ Teaspoon Turmeric Powder (Haldi)
  • Salt
Procedure:
  1. In a small bowl add split mustard seeds, turmeric powder and salt. Mix well and add warm oil to it and stir well.
  2. Now in a mixing bowel add lengthwise chopped carrots, lengthwise chopped green chilies, previously prepared masala and lemon juice. Mix well and our pickle is ready. Store and eat it after 2 days so that the carrot becomes soft.
