Turiya Gathiya Nu Shaak - Traditional Gujarati Recipes - Gujarati Rasoi

  • 250-300 Grams of Ridged Gourd (Turiya)
  • 1 Chopped Tomato
  • ¼ Cup Coriander Leaves (Dhania)
  • 1-2 Teaspoon Garlic (Lehsun) Paste
  • 8-10 Curry Leaves (Kadi Patta)
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1.5-2 Teaspoon Red Chili (Lal Mirch) Powder
  • Salt
  • Water
  • Oil
  1. Peel the ridged gourd, cut the top and bottom parts and then wash them well. Chop them into medium pieces.
  2. Now heat some oil and add mustard seeds, cumin seeds, asafoetida, curry leaves and chopped tomato. Stir well.
  3. Add garlic paste and stir well. Add finely chopped coriander leaves and stir well.
  4. Now add chopped ridged gourd and mix well. Close lid and cook for 2-3 minutes.
  5. Add turmeric powder, dhana jeera powder, red chili powder and salt. Mix well.
  6. Add some water and give it a stir. Close lid and cook for 5-7 minutes.
  7. Serve the shaak in a bowl and top it with some gathiyas. Turiya Gathiya Nu Shaak is ready.
