Dudhi Mag Nu Shaak - Different Gujarati Dudhi Nu Shaak Recipe - Gujarati Rasoi

Dudhi Mag Nu Shaak is a traditional Gujarati shaak recipe which is not only healthy but it is tasty. The combination of bottle gourd and green moong dal cooked in traditional masalas and topped with fresh coriander makes this recipe simply amazing. I have cooked the recipe in pressure cooker to cook the recipe quickly. You can serve this recipe with phulka or rotla.
  • 250 Grams of Chopped Bottle Gourd (Dudhi)
  • 1 Cup Soaked Green Moong Dal
  • 1 Chopped Tomato
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • 2 Dried Red Chilies (Lal Sukhi Mirch)
  • 10-12 Curry Leaves (Kadi Patta)
  • 1 Inch Finely Chopped Ginger (Adrak)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1.5-2 Teaspoon Red Chili (Lal Mirch) Powder
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • ¾ Teaspoon Garam Masala
  • Coriander Leaves
  • Salt
  • Water
  • Oil
  1. Heat oil and add cumin seed, asafoetida, dried red chilies, curry leaves, ginger and tomato. Sauté the ingredients well in oil.
  2. Add chopped bottle gourd and soaked green moong dal. I have soaked the moon dal for 30 minutes. Stir well.
  3. Add turmeric powder, red chili powder and garam masala. Mix well.
  4. Add salt as per taste, some coriander leaves and mix well.
  5. Add water and prepare the gravy. Close lid and pressure cook for 2 whistles. Dudhi Mag Nu Shaak is ready.
