Vada Pav Mumbai Famous Recipe - Monsoon Special Vada Pav

Mumbai and Vada pav are inseparable. Mumbai Vada Pav has a peculiar spicy and yummy taste which is incomparable. Today we will make this Mumbai Vada Pav recipe at home. The batata vada prepared in this recipe has the Maharashtrian touch and is place between the pav along with some butter, green chutney and the famous vada pav garlic chutney. For Potato Mixture:
  • 8-10 Boiled & Mashed Potatoes
  • Coriander Leaves (Dhania)
  • 2 Teaspoons of Ginger-Green Chilli (Adrak-Hari Mirch) Paste
  • 10-12 Curry Leaves (Kadi Patta)
  • 1 Teaspoon Mustard Seeds (Rai)
  • ½ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Salt
  • Juice of 1 Lemon
  • Oil
For Batter:
  • 2 Cups of Gram Flour (Besan)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1 Teaspoon Red Chilli (Lal Mirch) Powder
  • Salt
For Serving:
  • Pav
  • Butter
  • Green Chutney
  • Vada Pav Garlic Chutney 
Procedure:
  1. Heat oil and add mustard seeds, asafoetida, curry leaves and ginger-green chilli paste. Stir well and fry the paste.
  2. Add turmeric powder and some coriander leaves. Stir well.
  3. Add boiled and mashed potatoes and mix well.
  4. Add salt and lemon juice and cook the potato mixture for 2-3 minutes.
  5. Let this mixture cool down.
  6. Meanwhile prepare a smooth batter consisting of gram flour, turmeric powder, red chilli powder, salt and water.
  7. Heat some oil in a kadhai. Prepare medium sized balls from the potato mixture, dip it in batter and deep fry them well.
  8. Cut a Pav from the centre and apply butter to both sides. Apply green chutney on one side and place the vada in between. Add some vada pav garlic chutney and close the pav. Mumbai Vada Pav is ready.
