Sev Nu Shaak - Sev Bhaji Recipe Dhaba Style

Today we will make spicy and tasty Maharashtrian Sev Bhaji. This recipe can be an excellent to prepare during the monsoon when the availability of vegetables is less. Sev Nu Shaak or Sev Bhaji is a traditional Maharashtrian recipe which consists of a masala prepared using roasted coconut, roasted garlic and roasted ginger along with some golden browned onions. Ingredients:
  • Thick Spicy Sev
  • ½ Cup Grated Dried Coconut (Sukka Nariyal)
  • 2 Lengthwise Chopped Onions
  • 8-10 Garlic Cloves (Lehsun)
  • 1-1.5 Ginger (Adrak)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1.5-2 Teaspoon Red Chilli (Lal Mirch) Powder
  • ½ Teaspoon Garam Masala
  • Salt
Procedure:
  1. Heat oil and add onions and let it turn golden brown. Now add garlic cloves, ginger and grated dried coconut. Stir till they are roasted well and turn golden brown. Let it cool and then grind it into a smooth paste.
  2. Now in the same kadhai take some oil to prepare the gravy. Add cumin seeds, asafoetida, turmeric powder, red chilli powder, dhana jeera powder and stir well.
  3. Add previously prepared paste and fry it well.
  4. Now add water and prepare gravy.
  5. Add garam masala and salt. Mix well and let the mixture come to a boil.
  6. Switch off the gas and just before serving it, add sev and coriander leaves. Sev Nu Shaak is ready.
