Veg Kolhapuri Recipe - Restaurant Style Veg Kolhapuri - Spicy & Tasty

Recipe:
Ingredients:
  • 2 Chopped Potatoes (Aloo)
  • 1-2 Chopped Carrots (Gajar)
  • 100 Grams Chopped Cauliflower (Phool Gobi)
  • 100 Grams Green Peas (Matar)
  • 100 Grams Chopped French Beans (Farasbi)
For Masala:
  • 2 Sliced Onions
  • 1 Chopped Tomato
  • 3-4 Dried Red Chillies (Sukhi Lal Mirch)
  • 8-10 Garlic Cloves (Lehsun)
  • 8-10 Cashew Nuts (Kaju)
  • 1-1.5 Inch Ginger (Adrak)
  • 1 Teaspoon Muskmelon (Kharbuja) Seeds
  • Salt
  • Oil
For Preparation:
  • 2-3 Bay Leaves (Tej Patta)
  • 2 Dried Kashmiri Red Chillies (Lal Mirch)
  • 2 Star Anise (Chakri Phool)
  • 4-5 Black Peppercorns (Sabut Kali Mirch)
  • 4-5 Cloves (Laung)
  • 2-3 Cinnamon Sticks (Dalchini)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Kitchen King Masala
  • Salt
  • Water
  • Oil
Procedure:
  1. Heat some oil and add chopped cauliflower and chopped potatoes. Fry them well.
  2. Add green peas, french beans, chopped capsicum and chopped carrots. Stir fry them well.
  3. Remove the vegetables in a bowl.
  4. Heat some oil and add sliced onions. Stir till it turns transparent.
  5. Add chopped tomato and sauté it well.
  6. Now add garlic cloves, ginger, cashew nuts, muskmelon seeds, dried red chillies and salt. Stir well for 3-5 minutes.
  7. Now let the mixture cool and then grind it into paste.
  8. Now heat some oil and add bay leaves, dried Kashmiri red chillies star anise, black peppercorns, cloves and cinnamon sticks. Stir well.
  9. Now add the previously prepared paste and fry it well.
  10. Add turmeric powder, dhana jeera powder and kitchen king masala. Mix well.
  11. Add stir fried vegetables, salt and mix well.
  12. Add water as per requirement and prepare the gravy.
  13. Close lid and cook for 7-10 minutes.
  14. Veg Kolhapuri recipe is ready to eat.
