Surat Rasawala Khaman - Surat Special Street Food Recipe - Street Food of Surat

Rasawala Khaman is a popular Street Food of Surat. This recipe consists of crumbled vati dal na khaman, a raso or gravy prepared from a mixtures of dals and some salad. This salad consists of tomatoes, onions, coriander leaves and chaat masala. This street food recipe in Surat is extremely popular and is enjoyed by all ages. For Raso (Gravy):
  • ¾ Cup Tur Dal
  • ¾ Cup Moong Dal
  • ½ Cup Chana Dal
  • ¼ Cup Urad Dal
  • 2 Chopped Onions
  • 1 Chopped Tomato
  • 1-2 Teaspoons of Green Chilli- Ginger- Garlic Paste
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • 10-12 Curry Leaves (Kadi Patta)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1.5 -2 Teaspoon Red Chilli (Lal Mirch) Powder
  • 1 Teaspoon Garam Masala
  • Some Coriander Leaves (Dhania)
  • Salt
  • Oil
  • Water
For Salad:
  • 1 Chopped Onion
  • 1 Chopped Tomato
  • Coriander Leaves (Dhania)
  • Chaat Masala/li>
For Serving:
  • Sev
  • Coriander Leaves (Dhania)

  1. Take tur dal, moon dal, chana dal and urad dal in an utensil. Wash them, boil them and mash them well.
  2. Now in a kadhai heat some oil and add mustard seeds, cumin seeds, asafoetida, curry leaves and add chopped onions. Let the onions turn transparent.
  3. Now add green chilli- ginger- garlic paste and stir well. Add chopped tomato and sauté it well.
  4. Add turmeric powder, dhana jeera powder, red chilli powder and mix well.
  5. Add the mashed dal and mix well with the masalas. Add salt as per taste and water. Stir well. Let the mixture come to a boil.
  6. Now add garam masala and some coriander leaves. Mix well and our raso is ready.
  7. For the salad in bowl take chopped onion, chopped tomato, coriander leaves and sprinkle some chat masala. Mix well and prepare the salad.
  8. In a serving plate crush some khamans, on a side add place some salad and pour the hot rasso. Complete it with sev and coriander leaves. Rasawala Khaman is ready.
